Sugarless raw peanut butter oatmeal energy cookies


If anyone is looking for a quick healthy snack to take with them to work or just on the go these are for you. I make these cookies about once a week and they last about 3 to 5 days...not because they go bad. They only last that long because they are eaten in that short amount of time!

You will need:
  • A food processor
  • measuring cups 
  • plastic wrap
  • refrigerator 


Ingredients:

  • 2 Cup Packed pitted dates 
  • 3/4 Cup Organic crunchy peanut butter (check the ingredients to make sure its JUST peanuts and no sugar)
  • 1/2 Cup Unsweetened dried cranberries
  • 1/8 Cup Unsweetened shredded coconut
  • 1 T. Cold milled ground flax
  • 1 tea. Chia seeds
  • 1/8 tea. Sea salt
  • 1/2 Cup Oats
  • 1 tea.  Raw honey 



About this much peanut butter


Throw all ingredients into the food processor. Pulse it a few times to throw the ingredients around. Then turn it on and let it blend until it is well mixed. 

Dump the mixture onto a flat clean surface. 


Shape into any shape you want, I love them best in the shape of cookies.



Wrap each one individually and keep in the fridge. These are the most amazing snacks. The Chia and flax give these cookies Omega-3s and energy from the chia and honey. Dates are a good source of fiber and the peanut butter has a lot of protein! Enjoy these and get creative to make almost any kind of cookie you want.

Finally!!! Coffee Ice Cream

Finally I get to be in a place where I have enough bandwidth to finally upload pictures and videos and make this "Mountain Resort" a real thing to all of you who still have questions.

This is where we worked, I worked inside baking pies/cooking/waitressing and Joshua worked outside chopping fire wood and fixing anything that goes wrong in the resort!





This is our little cabin/shack we have lived in for 5 months.... no bathroom no electricity no heat and best part, free pets: Mice and Spiders.........All we could ever want! :) 








Then it snowed and we were really NEEDING the whole "heat" part...





So our boss graciously let us move into one of the Chalets our last week! We had a bathroom/shower.......Kitchen.....FIRE place but..... not that many pets though :( 





Our last little walk through the Mineral King Valley area. 



I am not going to lie..... It was hard living in the mountains but I have grown a lot and I have learned so many good skills while I was there. Including how to make homemade pretzels and a few other homemade goodies!! 


Joshua's birthday he got a round out of a tree that existed in the Sequoia National Park. The tree was given to Silver City from Disney. Yes that's right my friends. We will eventually have a poker table made out of a tree owned by Disney.

I made him homemade Coffee Ice cream and an ice bowl to put it in. If you have your own ice cream maker you can make it yourself. Just throw all of these ingredients in the machine.

  • 8 cups of heavy whipping cream
  • 4 cups of milk
  • 2 1/2 cups of sugar
  • 1/4 cup brown sugar
  • 4 Table Spoons Vanilla ex.
  • 1/2 table spoon coffee grounds
  • a drizzle of coffee
